Alpine milk
The milk we use is exclusively collected from Alpine farms located under 25 km away from our production facilities. Once the milk has been collected, the full fat milk is pasteurised at low temperature to preserve its organoleptic properties and isthen skimmed. A watchful eye is maintainedthroughout all these steps asthey are the prerequisites forexcellent tasting milk and cream.
Le Gaec de Pic Poncon has been producing Alpine milk for three generations. Thesedays, Nathalie, Catherine, Jean-François and Fabrice produce cow and goat milk.
Being driven by a passion for quality products, the farm produces milk with a couple ofdozen cows that graze peacefully on the Alpine foothills. In winter, they feed the cows with hay and cereal that they produce themselves.
Rather than producing more to earn more, Le Gaec uses part oftheir milk production to make cheese. Subsequently, they hold the quality of their milk extremely close to heart.
Madagascar vanilla
We carry out our own vanilla infusions from Madagascar pods. Slow infusion into the milk ascertains that all the subtle flavours are preserved.
Sacré Willy is supplied by « d’Authentic Products » which is committed to respecting fair-trade values in the countries of origin.
Vanilla beans are harvested in Madagascar in July by local producers who have their own plantations. The beans then undergo a dipping and sweating process to halt their growth. Having been dried in the sun and in the shade, the beans are then hand sorted, measured one by one and grouped into bunches.To obtain an aroma that is both well rounded and powerful, Sacré Willy selects two types of beansof different origins which are then slowly and naturally infused into our products.
In Madagascar, Gigi selects thebeans and is responsible fortheir preparation while constantly developing mutually trusting relations with the planters.Meanwhile, Laurence ascertains that the quality ofthe vanilla from each new harvest fully meets our needs.
Even though the quality of theselected vanilla beans is of paramount importance for Authentic Products, the Human factor remains crucial to obtaining good products.This is why AP is committed toimproving the standard of living of the planters and localpopulations: crop diversification, opening of a school and health centre, digging of 42 wells to facilitate access to drinking water…
In addition to following the HACCP approach, Laurence and Gigi check with the planters that they follow their recommendations for cultivating vanilla plants in the most qualitative way and aligned with the international standards; methods of scalding and drying vanilla, selection of plants.
Who is in a better position than Willy to know what is in its purées! All the fruit preparations are manufactured by us using purée with a 100% fruit content. We assemble them at the last moment in our product manufacturing process so as to preserve theirfreshness and ascertain irreproachable quality.
Fruit Rouges and Co is a producer turned transformer who has been making a range of fruit purées for 25 years.
Fruits Rouges and Co supervises all stages of production, provides advice toproducers and carries out quality control. The quality of the fruit undergoes strict quality control procedures during their transformation into purée to guarantee the original taste of the fruit is preserved.
By establishing close partnerships with producers in France but also abroad for exotic fruit, they are able to guarantee a selection of the best fruit that have been grown in the most appropriate parts of the world and harvested when they reach maturity.
Sacré Willy is committed to creating a variety of desserts that are ever more gourmet, without compromising on taste and texture. It is with this mindset that we conceived our delicious chocolate recipes. We teamed up with master chocolatier Michel Cluizel to develop creams unlike any other: plantation chocolate creams. Over and beyond their pure origins, the cocoa beans we use come from a unique plantation located in Guatemala for La Laguna cream and Brazil for Riachuelo cream. Combined with our noble ingredients and know-how, these creams are a real delight!
Manufacture CLUIZEL has been blending craftsmanship with innovation for more than 70 years. It has succeeded in fostering quality long-standing partnerships with plantations that supply them with hand-selected beans processed in accordance with tradition and heritage.
This approach not only guarantees the origins and quality of the cocoa beans used in our plantation chocolate creams, but also enables the plantation - which can be compared to a vineyard - to thrive thanks to the daily endeavours of cocoa farmers without whom none of this would be possible. It is these very farmers that Michel Cluizel and Sacré Willy pay tribute to with these creations.
